We know that cooks make the most demands of this herb both in the physical and culinary sense. How well does a particular type of garlic keep? How does it peel? But more importantly, how does it taste? Is it hot? Aromatic? Are there after tastes? While this grant limits the culinary scope of research, our soil and lab chemistry will give us some values of the sulfur compounds which we directly relate with pungency and flavor and potential health benefits.
