The garlic plant provides us wit 2 special and seasonal items
that creative Chefs wait for each year! Greens are the tender
immature leaves of the plant and the scape is the flower stalk
of the ophio-types. Both of these are available months before
the bulbs are harvested and cured.
All parts the garlic plant have the same flavors and chemistry
so you can mix and match the greens and scapes into any raw
or cooked recipe. Here's a favorite: Green / Scape pesto:
mix Garlic Scapes with Black Pepper, Anchovies and Olive oil
in a food processor;serve thick as a dip or spread. Add more
olive oil for a thinner pasta sauce.
